Light & Tangy Buttermilk Dressing

For an interesting diversion from oil-based vinaigrettes, try this utterly delicious light-weight dressing that delicately coats leaves with a fresh, herby tang. While optimal on little gems, romaine, or other hearty lettuces, it is not overly viscous and thus also in good company with field greens. Salad additions such as sliced tomatoes, avocado, sweet onion, grated carrot and cucumber really make this dressing shine.
1 3/4 cup chilled buttermilk
7.5 ounces chilled creme fraiche or plain Greek yogurt
1/3 cup white wine vinegar
juice of 1 lime
1/2 chopped chives
1 clove pressed garlic
1 teaspoon sea salt
freshly ground pepper to taste
optional: 1/2 teaspoon lime zest
Whisk together all ingredients and chill again for a least 10 minutes.
