Quick Roasted Tomato Salsa
A quick and easy roasted tomato salsa made freshly at home is still better—and cheaper—than anything available at the store. This is a single pot job that requires almost zero precision, as it all gets thrown into a blender or food processor after a short simmer.
INGREDIENTS
1 14.5 ounce can diced fire-roasted tomatoes
½ onion, diced
1 Serrano pepper sliced horizontally (remove seeds for a mild salsa or leave them in for medium)
1 large clove garlic, roughly chopped
¼ teaspoon salt
juice of 2 limes
DIRECTIONS
Add to a medium saucepan the tomatoes, onion, Serrano pepper, garlic and salt. Simmer for 30 minutes. Let cool off heat for 10-15 minutes. Transfer to a blender or food processor. Add lime juice. Blend or process until smooth with some texture remaining. Serve room temperature or chilled.
